With our Cabo trip booked, we simply couldn’t resist booking a stay at One&Only Palmilla to experience their A+ hospitality first hand. One&Only Palmilla Resort Grounds
One&Only Palmilla is a luxury resort in Cabo Mexico. The moment we arrived at the resort, we started to experience their legendary hospitality. We were offered welcome drinks and whisked away on a golf cart for a grand tour of the vast property. Every staff we encountered greeted us with a warm “buenos dias” and a hand over their heart. We already felt at home!
The rooms are in separate villa-esque houses offering unrivaled privacy. Every villa is surrounded by lush greens dotted with colorful tropical flowers. For a second, we forgot we were in the Los Cabos desert.
We were escorted to our room, where our personal butler and our bags were waiting for us. That’s right, every One&Only Palmilla’s guest gets a private butler. This is next-level velvet-glove treatment. No wonder they’re decorated with countless awards and the shiny title of Five Star Resort by the Forbes Travel Guide.
The rooms echo Baja-chic vibes and offer incredible views of the Sea of Cortez. The decor is luxurious yet inviting. Expect to see hand painted tiles and custom handcrafted doors. We came into a room full of welcome treats. We did a quick cheers with the grapefruit margaritas and headed out to explore the grounds.
One&Only Palmilla Pools
The resort has numerous pools on property and each have their own unique features.
Agua Pool
Agua pool is an infinity pool peering over the Sea of Cortez. The pool is connected to Agua restaurant and is family friendly. A child-friendly splash pool will keep little ones amused while you enjoy the rays. We loved coming here early in the morning, grabbing a light breakfast at Agua, and spending the morning in the infinity pool.
Vista Pool
Vista Pool is an adults-only pool with a swim up bar. It too has an infinity overlook! The swim-up bar is fully equipped to whip up the best margs you’ve ever had! I asked for a passionfruit + mezcal something and oh-my, it was delish! The pool is centrally located, a level below Breeze restaurant. You can grab bits at Breeze and enjoy them by the pool.
One&Only Palmilla has an award winning spa and wellness program. You can get trial foot massage by the pool. It’s a great way to get a sneak-peek at their full massages. Be sure to reserve this ahead of time!
One&Only Palmilla Experiences
Only&Only Palmilla is situated on one of the few swimmable beaches in Cabo. The beach is dotted with private cabanas and we knew we had to experience this! We booked 2 different cabanas on 2 different days.
Cabana Beachfront Picnic Lunch
The Cove cabana is more private than the other cabanas. You feel as though you have a little part of the beach to yourself! It’s surrounded by a U-shaped rock formation. You can bring your own food or opt for a picnic lunch.
One&Only picnic lunches are next level. When we arrived at our reservation time, the team had set up a beautiful beach-side picnic complete with welcome coconuts and a custom sign! They really went above and beyond to ensure every detail was perfect. The picnic came with appetizers, mains, and desserts. You can choose the items you want in your picnic basket ahead of time.
Private Beachfront Cabana
There are few of these cabanas on Pelican beach. They are reservable for the entire day and make the best home-base while enjoying beach-side activities and the complementary water sports. The staff are just around the corner if you’re craving a taco, smoothie, or cocktail. We got lobster tacos, lobster rolls, and ceviche!
Spa & Wellness
The award winning spa at One&Only Palmilla is the perfect way to rest, relax, and recharge. The spa is an oasis on its own: plunge pools, rain showers, outdoor pavilions, swinging day beds, and a stocked juice bar. The spa offers a curated menu of treatments, from massages and scrubs, to facials and peels, to couples experiences. You can enjoy the signature treatments in one of the 13 private treatment villas or at the ocean-side palapa.

The culinary program at One&Only Palmilla is triumphant. The resort has 5 restaurants, lounges, and bars, so you’ll be spoiled for choice.
Restaurant Agua
Restaurant Agua is perched on the cliffside and offers front row seats to the golden sunset. You can make your evening extra romantic by reserving one of the few booths (pictured below!). The menu is Baja-inspired with a focus on fresh seafood from the Sea of Cortez and seasonal product. Expect to see a modern take on Mexican classics. We started off with the seafood platter, which was brimming with king crab legs, ceviche, tiger prawns, and the goodies from the sea. For mains, we stayed in the seafood realm with salmon and ceviche. If I had eat 2 desserts for the rest of my life, this would be Agua’s tres leches and churros. TRUST ME!

One&Only Lounge
The One&Only Lounge’s floor-to-ceiling windows and A+ cocktail program is such a fun way to start the evening. I switched up my usual mezcal margarita with a mezcal Negroni, and it was perfection. We then proceeded to order 3 more cocktails (as one should!).

Seared by One&Only
Seared is a Jean-Georges restaurant, a chef decorated with Michelin stars year after year. Seared’s menu is luxurious. Come here for steak and seafood cooked to perfection. We got the Kobe, wagyu, caviar(!!!), foie, tuna tartare, and ended off with their carrot cake and soufflé.

Suviche
Suviche is a Japanese fusion restaurant. The menu offers sushi, ceviche, and a very extensive list of sake. Luxurious caviar and truffles make appearance on the dishes, and we welcomed them with open arms.

Breeze
Breeze offers breakfast and al-fresco all-day dining by the Vista Pool. The vibe is relaxing. We picked up an açaí bowl, avocado toast, and chilaquiles and enjoyed it pool-side.
In-room Dining
We wanted to take full advantage of our balcony. So we opted for in-room dining on our last day. The staff promptly came by and set up a gorgeous spread on our balcony. We ordered a little bit of everything: fresh fruits, pastries, chilaquiles, fresh coffee, green juice (because health), and avocado toast.

Pelican Beach Grill
Pelican Beach grill offers a casual menu by the beach. You can go fancy with lobster rolls and lobster tacos, or keep it simple with fish tacos and a margarita. We did both!
The Rooms
The rooms are contemporary with a dash of Mexican charm. One&Only offers numerous room types to suit your needs: from the exclusive four-bedroom Villa Cortez and two-story Villa One, to suites with plunge pools.
We got the Junior Oceanfront Suite. Your Junior Suite features a master bedroom with a king-size bed, and a living area detailed with Mexican ceramics and hand-woven furnishings. It has a patio overlooking the sea! The bathroom is huge and features a deep travertine bathtub, separate pebbled rainfall shower, and double vanities.
